Warm your cockles with this guilt free (ignore the sugar) seasonal treat.
Preheat your oven to 180 C
Grease and line your chosen tin.
Arrange your sliced pears in the bottom of the tin in your chosen design.
Make the flax egg and set aside.
Soften the coconut oil if not already soft enough and combine with the sugar.
Whisk the flax for approx 1 minute, add the vanilla and whisk for a further 1 minute.
In a separate bowl measure the dry ingredients.
Combine your flax mix with the sugar and oil.
Now mix the wet ingredients with the dry. You'll find the mixture is thicker than an average cake mix.
Finally get the diced pears in the mix.
Pop the mix in your prepared tin and bake for approx 45minutes or until a knife can be inserted and removed cleanly.
Allow to cool for 5 minutes before removing from the tin. Turn upside down and dust with icing sugar.
Now make a cuppa tea!
